Additional release-97 updates

Description

For release 97: patch the test databases, bump the version number, update the docs pointer.

Use case

This is part of the release cycle (for 97, see ENSCORESW-3100) yet has not been done yet.

Benefits

Will be able to branch ensembl-rest for Ensembl release 97.
